Tomato Soup Spice Cake

This is my Dad's favourite.


Preheat oven to 350 F. Grease two cake pans. Cream margarine and gradually add sugar. Add eggs. Beat until light -- about 6 minutes. Add enough water to soup to make up to 2 cups. Set aside. Combine flour, baking soda, baking powder and spices. Add flour mixture alternately with tomato soup to butter and sugar mixture, starting and ending with flour (about 4 additions of flour, 3 of tomato soup). Stir in raisins. Pour into baking pans. Bake 35 to 45 minutes (or 15 to 20 minutes for cupcakes).


Beating the margarine / sugar mixture makes a light cake that rises well. Try it with all of your cake recipes.

Alternating flour and liquid in any cake recipe prevents the mixture from curdling.
