Rhubarb Cake

A moist, tart cake.


Topping Grease 9 inch square cake pan. Preheat oven to 350 F. Cream sugar, margarine, egg and salt together. Add baking soda to sour milk. Add 1/3 of flour to margarine mixture and mix well. Add 1/2 of sour milk, mix well. Continue to alternate flour and milk until done. Add vanilla and rhubarb. Mix topping ingredients together. Pour batter into cake pan. Sprinkle topping over batter. Bake aobut 40 minutes.


If you have to make sour milk, add 1 tablespoon vinegar to 1 cup of milk and let it stand for a few minutes.
