Great for breakfast, lunch or snacks.


Preheat oven to 400 F. Grease 12 muffin tins, or line with cupcake papers. Combine flour, sugar, baking powder and salt. Mix well. Set aside. Combine eggs, milk and butter. Add all at once to flour mixture. Stir just enough to wet all the flour. DO NOT over mix. Fill muffin tins 2/3 full. Bake 20 minutes.

Cheese and Bacon Muffins

Add 1 to 1 1/2 cups grated cheddar cheese and 1/2 to 1 cup chopped fried bacon to the flour mixture. Use bacon fat in place of margarine.

Blueberry Muffins

Increase sugar to 1/3 cup. Add 1 teaspoon grated lemon rind and 1 cup blueberries (fresh or frozen) to the flour mixture.

Cranberry Muffins

Coarsely chop 1 cup cranberries. Mix with 1/2 cup sugar. Let sit while you prepare the rest of the ingredients. Add to the flour mixture.
