Minnestrone Soup

The pasta really absorbs the flavour of the soup. Very tasty.

Ingredients

Bring beans to a boil in lots of water. Turn off heat. Let sit 1 hour. Drain.

Put beans in a large soup pot. Fill with water. Boil for 2 hours, until beans are soft. Drain and set aside.

Chop bacon and cook in soup pot. Add garlic and onion. Cook until onion is transparent. Add carrots, celery, tomatoes, broth, parsley and basil. Simmer 30 minutes. Add cabbage and any other desired vegetables and simmer a further 10 minutes. Add pasta. Cook until pasta is done -- about 7 to 11 minutes.

NOTE:

Can become a vegetarian meal by leaving out the bacon. Try barley instead of pasta, adding it with the broth. Add peas, corn and/or zucchini for a change of pace.
