Green Beans with Olives

I had a really great bean harvest in 1998. This was the best recipe I made.
I made it with mixed green, yellow and purple beans, too.


Place beans into a pot of boiling salted water. Cook about 7 or 8 minutes. Drain and set aside.

Heat the oil in a large fry pan. Add onions and garlic. Cook 2 minutes over medium-low heat. Add tomatoes and basil. Cook 3 more minutes. Add beans and cook a further 3 to 4 minutes. Stir in olives, and serve.


If you make this with canned beans, keep in mind that they are already cooked. Just drain them and add at the end. If you are using frozen beans, they only have to boil for 3 or 4 minutes.
