Eggs in a Nest

This is popular whenever I make it. But since mashed potatoes are so well liked, it is difficult to have leftovers. The family's appetite expands to meet the mashed potatoes available.


Prheat oven to 425 F. Spread mashed potatoes in a casserole dish. Make indentations to hold the eggs. Break one egg into each "nest". Sprinkle with breadcrumbs and dot with margarine. Bake 15 to 20 minutes, until eggs are set. Cook a little longer to set the yolk.

If making this as a main course, use 2 eggs and about 1 1/2 cups of potatoes per person.
