Cornbread

Also known as Johnny Cake.
Good for breakfast with jam, or as a side dish with supper. Best hot.

Preheat oven to 400 F. Grease 12 muffin tins, or 1 loaf pan. Mix cornmeal and milk together. Set aside. Combine flour, salt, baking powder and sugar. Add egg and margarine to cornmeal mixture. Pour into the dry ingredients and stir just until mixed. Fill pans. Bake 20 to 25 minutes. NOTE:

To achieve a consistent product, make sure the dry ingredients are well mixed to evenly distribute the baking soda. If the texture is too mealy, let the milk/cornmeal mixture sit for an hour or more to soften.
