Carrot Muffins

Not as sweet as Carrot Cake, but still good with a cream cheese frosting.

Carrot Muffins

Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 1 apple
  • 1/4 cup chopped nuts
  • 2 cups grated carrot
  • 1/2 cup raisins
  • 3 eggs
  • 1 cup milk
  • 2 teaspoons vanilla

Preheat oven to 375 F. Grease 12 muffin tins, or line with cupcake papers. Combine flour, sugar, baking soda, spices and salt. Mix well.

Peel and core apple. Grate into the flour mixture. Add nuts, carrot and raisins.

In a separate bowl, combine eggs, milk and vanilla. Add all at once to flour mixture. Stir just enough to wet all the flour. DO NOT over mix.

Fill muffin tins 2/3 full. Bake 20 minutes.
